Undergoing wild yeast fermentation, the wine was gently extracted over a long, slow maceration spending 21 days on skins before being pressed to barrel. It was then matured for 13 months in seasoned oak, allowing the wine to evolve with purity
“From Glenhope Vineyard in Macedon Ranges; an ex-Virgin Hills block planted in the 90s. Wild fermented, matured in older oak. Yayoi consistently quality, interesting, delicious wines – a holy trinity as such. Fine, sleek, tightly wound, great texture. Still in a greener vein, but some more purple fruit and cassis today. “From near 35 year old vines on Moorabool Ridge Estate in Geelong. The wine is produced in stainless steel and set up as a juicy, silky, bright young thing.
Plush, fleshy, bubblegummy, all purple. Dig in. Chill it. Skol. Mulberry and boysenberry with Hubba Bubba dashed with white pepper, sea spray, light aniseed and barely there rosemary herbal inflection. Lighter weight feel in the palate, all juicy and easy flow, a soft landing to finish with a hint of crispness in the lingering flow of pretty fruit and herbiness.
